Grease ignition in an extraction system typically occurs in one of three ways.
Flashback from cooking equipment: A flame from a gas burner, grill, or fryer reaches the canopy hood and ignites accumulated grease deposits. The fire then travels through the ductwork, following the grease deposits upward through the building.
Spontaneous ignition: In heavily loaded systems, grease deposits can reach temperatures at which spontaneous ignition occurs, particularly in systems where the extraction fan is drawing hot air through grease-laden ductwork.
Electrical fault: An electrical fault in the extraction fan or associated wiring can ignite nearby grease deposits.
In all three scenarios, the outcome is the same: a fire that travels through the ductwork of the building, potentially spreading to multiple floors and areas that are remote from the original cooking equipment.
How TR19 Cleaning Reduces Fire Risk
